Summer's (un)inspired cooking
Do you ever feel like you get in a rut when deciding what to make for dinner? I feel this especially in the summer. Summer time is my most uninspired time for cooking - especially when it's hot.
Tonight's dinner was supposed to be stir fry. Brianna requested it, however, she was going to be gone during dinner (not originally part of the plan). It's not Alex's favorite, and I needed to cook the chicken. I debated back and forth about making pasta because it's already on the menu for later this week.
I just decided to make a go for it and flew by the seat of my pants. I pan fried the chicken in some olive oil. Cooked the pasta. Then drizzled a load of olive oil in the pan and added garlic, some garden fresh tomatoes, olives, herbs from my garden (basil, thyme and parsley), salt and pepper. I added a bit of reserved pasta water to help break up the noodles.
It ended up being good and I was told it was a keeper. I'm sure I won't be able to re-create this again, though!
